Feeding the crew

Planing for an extended voyage on a small boat has its challenges.  Here is a proposed list of supplies for thirty days away from civilization. 

List of food supplies for 30 days without re-supply.

 

10 lbs Washington apples

6 green belle peppers

10 lbs yellow onions

4 lbs TVP in 4 containers (double zip lock)

10 lbs of dry beans of different kinds in 1 lb zip locks

10 lbs brown rice

10 cans corn

10 cans unsalted sweet peas

4 cans hominy

1 bag bullion cubes

10 lbs sweet potatoes

10 cans crushed tomatoes

30 dinners

10 containers of wheat spagetti

10 cans spaghetti sauce

large hot madras curry container

2 each hot and regular Mrs Dash

1 salt

1 Hot Red pepper ground.

4 packages Old Bay seasoning for seafood

4 Celery packs

10 lbs potatoes

4 packs carrots

15 cans fruit.

Black pepper grinder. 

Container of Kosher salt

2 lbs Kashi

2 lbs Millet

4 lbs cracked wheat

2 lbs butter

1 quart olive oil

4 lbs mixed nuts

6 plantains

Cooking dry beans in a tasty way:

Beans in a pressure cooker.

2 cups mixed beans soaked for 2 hours and rinsed 3 times

1/2 onion and 3 squeezed garlic cloves

1 tsp hot madras curry

1 tsp seasoning salt.

cook for 45 minutes and cool to open

meanwhile sauté 1 medium chopped onion, one elephant garlic clove, 2 large carrots chopped, 2 stalks of celery, 1/2 bell pepper chopped with 1 tbs butter, one tablespoon of olive oil and 1 tsp hot madras curry.

Mix in with beans, add 1 cup chicken broth or water with bullion. Cover and cook under pressure for 10 minutes.

Hawkins pressure cookers are an inexpensive alternative. I have a very nice 2 liter simple cooker which is very usable on the smallest of boats.  You can find them here

Speaking of cooking utensils that really work: I just acquired double boiler cooker from Target.  This fine stainless steel cooker takes up the room one slightly tall pot and cooks grains with the skill no pot or pressure cooker can do.  I just cook some cracked wheat for my cereal this morning.  Usually the mass is a sticky goo on the bottom of the pan that has to be soaked and scraped to clean up.  With the double boiler it is totally nonstick and can be cooked either as a porridge or light and fluffy with easy clean up.  Here’s my healthy recipe for cracked wheat porridge:

Fill bottom pan of double boiler up to the base of the steamer pot with water.  Add i/2 cup of cracked wheat to the steam pot.  Stay with me here:  add 1/2 tsp. hot madras curry, 1/4 salt 1 tsp. olive oil and one cup water.  Steam for 20 minutes or until the consistency is to your liking.  Serves one to two.  Clean up easily and stow pots together.  This works for millet, barely, Kashi and rice.  Sautéed vegetables such as onions, garlic, bell pepper, carrots etc. can be added to make a richer mix for any meal.  The vegetables can be sautéed in the pot before the steaming starts. Use oil and at touch of curry and salt to add flavor. You can also add TVP that has been soaked in enough water to soften. Just make sure the water pot doesn’t burn dry.
